Krasnoyarsk scientists found out that fish of the Yenisei river is an invaluable source of Omega-3

4 June 2020 г.

Красноярские ученые выяснили, что енисейская рыба - бесценный источник Омега-3
Scientists of the Institute of Biophysics of the Krasnoyarsk Science Center SB RAS, Siberian Federal University and Krasnoyarsk Center of Standardization, Metrology and Certification studied the nutritional value of smoked fish belonging to genus Coregonus (whitefish, omul, muksun, tugun, peled) caught in the Yenisei river basin.

During the research, scientists determined such an important indicator of the nutritional value of fish products as the content of eicosapentaenoic and docosahexaenoic acids (EPA and DHA which are the main components of Omega-3) - protectors of cardiovascular diseases. These polyunsaturated fatty acids are part of the cell membranes and blood vessels, and they are not synthesized in sufficient quantities in the human body even though being one of the necessary components of a healthy diet.

Eicosapentaenoic acid (EPA) improves blood properties, and reduces thrombus formation and deposition of cholesterol plaques. Due to the synthesis of leukotrienes, the substances contribute to the activation of leukocytes, and improve their cytolytic properties, which is necessary for the rapid relief of inflammation.

Docosahexaenoic acid (DHA) is more important than other omega-3 molecules, as it has a wide range of positive effects. It is used in various fields of medicine.

Together, DHA and EPA reduce the risk of acute cardiovascular diseases, and the likelihood of thrombosis; they normalize cholesterol levels, stimulate weight loss, improve the reproductive health of men and women, and increase working efficiency. Children need them for the brain formation, myelination of nerve endings and adequate development of vision.

According to Mikhail Gladyshev, Corresponding Member of the Russian Academy of Sciences, the head of the research, all the studied fish species purchased from a local producer and supplier with a good reputation had high nutritional value. For example, to get a daily dose of EPA and DHA recommended by the World Health Organization for the prevention of cardiovascular diseases, it is enough to eat only about 150 g of smoked tugun.

In the course of the research, the indicator of food safety was measured, namely, the content of potentially toxic heavy metals in Yenisei fish. The dose of heavy metals consumed with the recommended portion of fish turned out to be tens and hundreds of times lower than the toxicological threshold.

Also, using molecular-genetic and biochemical markers scientists verified information provided in trade labels on the species and fishing area. The fact is that the Krasnoyarsk scientists also developed a methodology which allows one to determine whether fish being sold is the result of breeding at a fish factory or it was caught in natural conditions. This is an effective way to combat poaching. All characteristics of the investigated fish samples corresponded to the declared ones.

Thus, using modern methods of chromatography-mass spectrometry, inductively coupled plasma spectroscopy and DNA sequencing, a high nutritional value and the safety of consumption of popular local fish products from Yenisei whitefish were established, which exceed those of many analogous species in the world.
